All you need is one decent-sized frying pan or skillet and a handful of ingredients to make this hearty and flavourful Mexican-style dinner. The whole dish can be made in about thirty minutes which makes it ideal for days when you are pressed for time.
Begin by browning and draining one pound of ground beef. Add the meat back to the frying pan and add one finely diced onion, a cup of sliced black olives and a cup of corn. For seasoning, I added a tbsp each of chili powder, cumin and minced garlic.
Mix the meat, vegetables and spices well and allow to cook for one minute on medium heat. Add one cup of tomato sauce, one cup of your favourite salsa and a quarter of a cup of water. Mix in one cup of shredded cheddar cheese and let the mixture come to a low boil.
Slice six flour or corn tortillas into roughly one-inch pieces. I used a pizza cutter to make quick work of them! Toss them into the skillet and mix to coat. Cover the pan and let it simmer for five minutes.
Once the skillet dinner has simmered for about five minutes, all that is left to do is serve it up and add a little bit of grated cheese on top. Not only is this dish super quick and easy to toss together, it is nice and light on kitchen clean-up since you only need one skillet for the whole meal!
